1. First, prepare a small piece of lean meat and simply wash it with water. 2. Clean the pork and cut it into thin and even slices. Then we need to simply marinate it. Add a little salt, a spoonful of light soy sauce, a spoonful of cooking wine, a little pepper, a little shredded ginger to the pork slices, and mix well.

Then prepare a large bowl. Add 80 grams of flour into the bowl, then add 40 grams of cornstarch, and add an appropriate amount of water while stirring. Prepare an iron pot, add an appropriate amount of cooking oil to the pot, heat the oil to 50% hot, then add the prepared meat slices piece by piece into the hot oil, and fry over medium heat. 5. Slowly fry over medium heat for 6 minutes. After the surface of the meat slices is fried to a golden color, you can remove the fried crispy rice from the pot and remove the oil for later use. Then heat the hot oil in the pot again until it is 90% hot.
