1) First, prepare the marinade, using Zhenjiang balsamic vinegar and soft sugar, with a ratio of about 4:1.5; No water, no salt!

2) Peel the garlic, peel it into garlic cloves, and dry it indoors at room temperature for half a day;

3) Prepare a glass bottle with the size of 500ml~ 1000ml, clean it, put it in a microwave oven, and heat it with high fire for 4 minutes to completely kill bacteria.

4) Put the dried garlic cloves into the bottle, pour the prepared marinade to submerge the garlic cloves to the bottle mouth, close the bottle cap, and wrap and seal the outer side of the sealing part of the bottle cap again with raw adhesive tape (or wax).

5) Leave it for 3 to 6 months! It tastes spicy after a short time, but it won't feel spicy at all after a long time.

*: Sweet and sour garlic also has the function of treating diarrhea. If someone or a child has diarrhea at home, give him some antidiarrheal drugs!

* *: Be sure to use "Zhenjiang balsamic vinegar"! There is a saying in Zhenjiang: "balsamic vinegar is not bad", so even if you eat it for a year, it will not be moldy! Note: there are many authentic "Zhenjiang balsamic vinegar" on the market, so it is best to choose "Hongmei brand" or "Jinshan brand" when buying!
