Using an air fryer to make bread is generally set to 180 degrees and takes about 20 minutes.
The specific formula is: 120g flour (95g high-gluten flour + 25g low-gluten flour), 24g sugar, 24g eggs (half an egg), 55g milk, 3.6g yeast, a pinch of salt, butter or Mix 10g of butter and salad oil.
Steps:
1. Use half of the flour and mix other ingredients except salt and oil evenly.
2. Pour the remaining flour and a pinch of salt into the mixture. When it is almost finished, pour in the oil and knead it into a dough. Leave the base oil in the oil bowl for later use.
3. Take out the dough and knead it on the chopping board until the film comes out. After many experiments, the quality of the flour plays a key role in whether the film can come out quickly.
4. Knead the dough into a smooth surface. The smooth surface can prevent fermentation gas from escaping.
5. Cover with warm water to keep warm and moisturize for fermentation. The temperature is 40 degrees, which is a bit hot for your hands.
6. Ferment for 60-90 minutes until doubled in size. Use your fingers to press the dough lightly and it will become soft and the fingerprints will not bounce.
7. Take out the dough and knead it to release the air, then divide it into five equal parts and gently roll it into a round ball, about 100%.
8. Let the dough ball relax for 5-10 minutes until it becomes a little flat. Flatten with a dough pin or your hands.
9. If you need to spread the sauce, you can do so at this time.
10. Fold in half.
11. Roll it out slightly.
12. Roll up. If there is no sauce, it is best to roll it in the same way so that the fermented bread fiber will not be too long.
13. Touch the remaining base oil from the oil bowl into the mold, and put the rolled petal-shaped dough into the mold.
14. Continue to ferment in a high humidity environment of 40 degrees for 45 minutes to 1 hour until the dough doubles in size. Brush the surface with egg wash, cover the mold with tin foil and place it in the fryer.
15. The bread will be cooked at 180 degrees for 18 minutes. Open the tin foil and bake at 150 degrees for 5-7 minutes to color the surface.
16. It is very easy to unmold the bread. When it is slightly cool, you can just use a cup to push it down
