Many famous dishes in Yunnan can be eaten in other places, but there is one dish that you haven't eaten before. This dish is called Qiwo Chicken:
Ingredients:
A live strong chicken (about 2g), 15g of refined salt, 3g of ginger and onion, 2g of monosodium glutamate and 3g of pepper.
Method of making:
1. Slaughter the chicken, remove its hair and impurities, clean it, cut it into 4cm square pieces, then use clear water to remove blood and water; Cut the onion into sections; Slice ginger and pat it loose with a knife.
2. put the chicken nuggets into a steamer, add salt, onion, ginger and cover them, then put them on the earthen pot mouth where 5g of clean water can be put, and seal the joint.
3. Place the earthen pot on a strong fire to boil, so that the steam in the earthen pot can enter the steam pot through the central pipeline of the steam pot, and steam until the chicken is cooked. Remove the onion and ginger slices, add monosodium glutamate and pepper, and put the steam pot at the bottom of the tray when eating, and serve.
The real name of "Yunnan Steamed Chicken" is Jianshui now. Due to the limitation of kitchen utensils, I bought a set of three pieces when I went to Yunnan, and made them myself. It was delicious! Steamed chicken is unique in making.
