There are five steps to making Tianjin pancakes.

The first step is to grind mung beans and millet into powder, add water and pour the resulting paste onto the cheng. cheng is the round inner part in Tianjin dialect.

In the second step, use a T-shaped spatula to spread the batter evenly on the Cheng.

The third step is to crack two eggs on the half-cooked pancake, then sprinkle an appropriate amount of chopped green onion and turn the pancake over.
