1. What restaurant did you eat this dish in? It was decades ago when we were wearing military uniforms. Once we went to Chengdu on business, on the way back to the military camp, we walked into Wenjiang Guest House, and a comrade-in-arms who had eaten here before ordered this dish. He said he wanted to come here to eat meat with sand every once in a while. When the waiter served steaming sand meat, a smell of meat and beans came to the nose. 2. What is the meat with sand? Pork belly with sand is the pork belly of local authentic black-haired pig. Pork belly is cut into thin slices about three inches long, two inches wide and half a centimeter thick, then the thin slices are divided into two parts, filled with pre-prepared mung bean paste stuffing, and steamed in a pot. Adding sugar and a little seasoning to the stuffing, each piece of meat is crystal clear, instant in the mouth, sweet and delicious, fat but not greasy, with a strong and clear aftertaste.
There are sand meat in other places, but it is different from Sichuan. Shaanxi Guanzhong and Henan Lingbao also have sand meat, but the practice and taste in the north are very different from those in Sichuan. Roughly speaking, the meat with sand in Guanzhong and Lingbao areas is cooked with pork belly prepared in advance and oiled, then the sweet potato slices are cut into the same size as the meat slices, and then fried in an oil pan. A piece of meat and a piece of sweet potato, eight pieces in each bowl, packaged and steamed in the pot. Take the brown sugar out of the pot after cooking. At the wedding reception, this dish is very popular with the elderly and children.
Although the methods and materials of meat with sand are different, what they have in common is sweet food, which is deeply loved by people.
