Bright young pigeons are carefully selected, and their growing period is about 25 days. These young pigeons are raised with whole grains (corn, sorghum, hemp, peas and wheat) and drink pollution-free groundwater. Pigeons in this period are not only fresh and tender, but also rich in various easily absorbed nutrients.
The most critical and unique step in producing bright young pigeons is that all young pigeons should be soaked in aged salt water. The longer the brine, the more fragrant it is. The materials used in salt water are very special. It is made of more than 20 different medicinal materials and cooked in soup at the same time. Each material has a strict proportion, and the bittern prepared in different proportions tastes completely different.
