Wenshan Specialty Food Guide

In Wenshan, Yunnan, the locals are very good at eating and playing, and they eat whatever is on the mountain by sitting on the mountain.

The interesting things in Yunnan are eating insects and wild fruits. In fact, it’s not bad. Compared to the Cantonese people who eat everything, let’s learn about the Yunnan people’s food with the editor.

1. Five-color rice Five-color rice is a local specialty of Wenshan and a specialty of the Zhuang people. The yellow rice is colorful.

Locally, the Zhuang people call it Shiwu rice, which is generally made of five colors: red, purple, black, white, and yellow.

The most common form of this kind of rice is in autumn, when harvesting rice, farm women will wrap it in lotus leaves and go to work. This is the food for rice.

Some people may ask, how come rice has so many colors?

This is not some dye in its effect.

The colors here are all dyed by local natural plants.

The plant responsible for the black color is liquidambar leaf. This plant has the function of strengthening muscles and bones and has a good digestive effect on the intestines.

The yellow color is red orchid grass. The function of red orchid grass is to clear away heat, cool blood and produce blood. It has a good effect on girls’ menstruation.

Purple orchid grass is specially used to dye purple. It is also a medicinal material used by ethnic minority doctors. It is used to make soup and can treat diabetes, high blood pressure, dizziness, etc.

There is also this kind of five-color rice in Leishan, Guizhou. This is usually paired with Guizhou Miao's rice-flavored fish.

The farmer Gu Liang was carrying a small bamboo basket, which contained the lunch and was wrapped in rice dumpling leaves, which had the aroma of rice dumpling leaves.

2. Fire grass cake Qingming grass cake, as you can imagine from the name, this is often eaten during the Qingming Festival. The raw materials are rice and glutinous rice, then Qingming grass and a certain amount of sugar.

After steaming, put it in the rice cake and beat it, then shape it into a round cake with your hands. I am a bit like making rice cake during the Chinese New Year. When eating it, I fry it with rapeseed oil and wait until it is fried into a yellow pot. Then you can eat it. The shell is fragrant.

Crispy, I like the fried-yellow kind the best.

Others will eat it by dipping it in water, sugar or honey.

3. Zhuangjia Bangang Chicken is a very famous dish in Wenshan. In Wenshan, the meat from ducks and chickens is very delicious.

The most important raw material of Batam Chicken is the rooster, eh! This is different from the old hens used to cook soup.

To explain here, Baheng means sour soup. If you have eaten fish in sour soup, have you ever eaten chicken in sour soup? Sauerkraut is made from local red green vegetables in Wenshan. Local residents also use a kind of food produced locally in Wenshan.

Use wild vegetables to make sauerkraut.

In addition to the fresh fat of the chicken, I think the most important thing about this dish is the sauerkraut.

If you want to increase the nourishing effect of chicken, you can also add Wenshan’s specialty, Panax notoginseng.

The acid here can also be made with sour papaya. White-flowered papaya is produced in Yunnan. White-flowered papaya is made from melons in the green and astringent stage. The acid is stored in a clean tank for later use.

4. Rhubarb and mutton soup, the decisive factor in the rhubarb and mutton soup is rhubarb. Rhubarb itself is a medicinal material that has the effects of clearing heat, detoxifying, reducing inflammation and treating pain.

The wonderful thing about this is that it can remove the mutton smell.

5. Zhuangjia Pocket Medicinal Chicken Zhuang people really have many delicacies that are related to medicinal materials. The core of this dish is pork belly. Chicken, medicinal materials, and seasonings are all steamed and boiled in the pork belly. It’s amazing to think about it.

It was delicious.

6. Dendrobium Stewed Chicken and Dendrobium officinale Needless to say, this has been fetched a very high price in the market and has the reputation of being a cure-all for all diseases.

This dish is here because Wenshan produces Dendrobium. We all know that Dendrobium officinale is very demanding about the environment. In Yunnan, it only comes out in such an excellent environment as Wenshang.

7. Soak wild millet to make spicy wild millet peppers produced in Yunnan. The method is to make sour peppers.

8. Small wild garlic. Small wild garlic grows on the mountain. I miss the kind of Lycoris that grows at home, but it is not as beautiful as Lycoris, so it is not grown in the courtyard, but on the dining table.

The edible part is mainly garlic.
