Three knives in Yangzhou, namely, Yangzhou kitchen knife (food), Yangzhou pedicure knife (bathing) and Yangzhou barber knife (beauty), experienced several booms in the Han, Tang and Qing dynasties in the past 2,500 years, which gave birth to and stimulated the development and prosperity of the three knives industry and declined several times, and "forced" and promoted the ancestors of Yangzhou to leave their homes and take root in other places and cross the ocean. After thousands of years of hard work, Yangzhou Sandao has gone out of China and gone to the world.

Nowadays, Huaiyang cuisine, which is famous for its kitchen knife, has become one of the four major cuisines in China. The "Yangzhou Bath" signboard, which is famous for its "pedicure knife", hangs high in the hot springs of bath cities in major cities, and the hairdressing and beauty industry marked by "barber knives" has won everyone's favor. Yangzhou is recognized as the hometown, cradle and source of the three knives, and the three knives have become another important carrier and symbol of Yangzhou's long history. Yangzhou's "Three Knives" used to be a means for citizens and farmers to make a living, but now it has developed into a big industry, and the market space is getting wider and wider.

Today, the Victory Bridge on National Day Road has formed a distinctive "three knives" street.
