How to prepare the batter?
Noodle nest is one of Wuhan's special snacks, usually only served during breakfast time. Because it is thick around the edges and thin in the middle, it is concave, so it is called "noodle nest".
The dough is golden in color, crispy in the middle and soft on the edges, charred on the outside and tender on the inside, and has a delicious salty flavor, so it is very popular among the public.
I usually like to fry noodle nests at home. The oil used is safe, nutritious and healthy. The fried noodle nests taste better than the ones I buy. The edges are fragrant and soft, and the middle is crispy. When you take one bite, it is crunchy!
It tastes best when it's fresh out of the pan. I'll share with you how to make it.
Ingredients to prepare: 325 grams of rice, 100 grams of soybeans, 10 grams of black sesame seeds, ginger and green onions (appropriate amount). If you want the dough nest to be delicious, preparing the batter is the key. The ratio of rice to water cannot be wrong!
Soak the rice and soybeans in water for 7 hours in advance and mix until the water covers the rice and soybeans by 1 cm.
Be careful not to use too much water. If the batter is too thin, the dough will be thin and unshaped, and the fried effect will not be medium-soft and crispy.
Put the soybeans and rice into the food processor and blend into rice milk. There is no need to add additional water. The amount of water in the bowl is just right.
Add ginger foam, chopped green onion, and 4 grams of salt into the rice milk, and mix well to form a thick yogurt.
Put oil in the pot, put in the dough spoon and heat it together until there are bubbles around when inserting chopsticks.
Take out the dough spoon, pour out the oil from the spoon, add the rice paste, make a hollow circle in the middle, and sprinkle black sesame seeds on top.
Place in the pan and fry for 1 minute.
Use chopsticks to stir the dough slightly to remove the film, fry for another 10 seconds and remove from the pan.
There is also a kind of sweet potato noodle nest in Wuhan, which tastes burnt on the outside and soft on the inside, sweet and glutinous. The method is even simpler. Peel the sweet potatoes and cut them into 1 cm cubes. Add pepper, salt and flour and mix well.
Then add water and mix until it becomes thick.
Add oil and a dough spoon into the pot and heat until bubbles form around a chopstick inserted into it.
Take out the spoon, add the sweet potato cubes and spread them evenly.
Put it in the pot and fry for 2 minutes, use chopsticks to gently remove the film, turn over and fry for another 1 minute, until both sides are golden brown.
Crispy on the outside, soft on the inside, sweet and delicious sweet potato dough nest is ready.
