Huizhou cuisine has three treasures: Dongjiang salted chicken, stuffed tofu and braised pork with plum vegetables. In particular, braised pork with plum vegetables is quite famous at home and abroad. In fact, this is a masterpiece of Dongjiang Hakka in food culture.
Dongjiang salted chicken
A dish name in Huizhou. "Dongjiang Salt Baked Chicken" is a famous dish in Guangdong. It was first created in Dongjiang, Guangdong. More than 3 years ago, in some salt fields along the coast of Dongjiang, some people wrapped cooked chicken in gauze paper and put it in salt piles for salting and storage. This kind of chicken is delicious and has a unique flavor. Later, the salt industry in the capital of Dongjiang was developed, and local restaurants competed for the best dishes to entertain their guests, so they created a method of baking fresh chicken with hot salt, so the dishes began in Dongjiang Yu area, so they called this kind of chicken "Dongjiang Salt Baked Chicken"
Hakka fermented tofu
Fermented tofu is an essential traditional dish for Hakka people to entertain their relatives and friends on holidays. Fresh tofu, lean pork, a small amount of salted fish or eggs are used as raw materials. Boned salted fish, fried and fragrant, chopped with pork, embedded in tofu blocks, or steamed with slow fire, can be eaten, and some of them are cooked in a pot until they are half red, which is called braised tofu, which has a Hakka flavor.

During the Northern Song Dynasty, when Su Dongpo lived in Huizhou, he specially sent two famous chefs to Hangzhou West Lake to learn how to cook. After the two chefs returned to Huizhou, Su Dongpo told them to imitate the "Dongpo Braised Meat" of Hangzhou West Lake and made it into "Braised Meat with Plum Dishes". It was really delicious, refreshing and not greasy, and was well received by Huizhou citizens. For a time, it became a delicious dish at Huizhou banquets.
There are many famous local specialties in Huizhou, such as bamboo shoots and honey in Xixi, Longmen. Boluo Crisp Sugar, Mabei Meatballs, Luofushan Crispy Fermented Vegetable, Herb Oil, Shiba Sanhuang Chicken; Huidong Tieyong offers oysters, and Gaotanming ginger; Huiyang Danshui pear, Zhenlong litchi and so on.
Huizhou Hakka culture not only has the tradition of Hakka in Meizhou, Gannan and western Fujian, but also is good at absorbing the essence of Guangfu and southern Fujian cultures and forming a unique style. For example, Huizhou folk songs originated in Meizhou, but influenced by local indigenous songs, the tunes are not as mellow and soft as Meizhou folk songs, but they are loud and unconstrained. Dongjiang cuisine is also unique, different from Meizhou cuisine.
