Pan frying: Before cooking, pour a large amount of oil into the pan and heat it. Turn the pan to make the hot oil cover the inner wall of the pan. The oil in the frying pan can be reused several times, or it can be used for cooking after cooling.

pot: the oil film does not stick, but the oil film is not firm. The oil film will become thicker when cooking frequently, which is also the reason why the iron pot is more and more easy to use. However, detergent will seriously damage the oil film, so the iron pan should generally be washed with clean water and bamboo brushes without damaging the oil film. In addition, frequent stewing will also take away the oil film, so the wok is mainly fried as far as possible.

rust prevention: after washing the pan, it should be dried with fire water. If you don't deliberately apply a layer of oil on the pan surface for a long time, it will prevent rust.

repair: in case of rust, or if the paste pot can't be cleaned, you can consider restarting the pot. First, cook the pot with vinegar to corrode the attachments; Then rub the pot clean with a steel ball and wash it with detergent. At this time, the oil film and oxide layer inside were destroyed, so the process of boiling should be repeated. Except that there is no antirust oil to volatilize, the other process is basically the same as the first boiling.
