Step 1: First, put sugar and water into the pot and mix well. It doesn't matter if the sugar doesn't melt, because it needs to be heated before the next step.
Step 2: Put the pot on the fire and bring it to a boil, then immediately turn it down. After the sugar melts, quickly pour the flour into the pot, stir it while pouring it, and save energy with a small rolling pin, and stir it into instant noodle dough that does not stick to your hands. Don't turn off the fire, use a small fire to keep warm.
Step 3: Brush a proper amount of cooking oil on the chopping board, take the dough out and put it on the chopping board, air it to a temperature that is not hot, knead it evenly, cover it with plastic wrap and let it stand for 10 minute. Then rub it again. At this time, the dough will be smooth, neither soft nor hard. If the dough is soft, you can add a little flour and knead it well.
Step 4: Knead the proofed dough into a long strip and then pull it into a preparation. I made about 60 grams each, just right.
Step 5: Divide the bean paste into small portions, about 30g, and knead into balls. Bean paste stuffing can be bought in the supermarket or made by yourself.
Step 6: The flour paste is wrapped into bean paste according to flat round pieces, and the mouth is closed and pinched to prevent it from bursting.
Step 7: Turn it over, fold it and gently flatten it into a small round cake. Don't push too hard, be careful to squeeze out the bean paste stuffing inside.
Step 8: Put a proper amount of cooking oil into the pot and heat it to 50%, and the temperature is about 150 degrees. If there is a thermometer, it is best to measure it with a thermometer. This is a kitchen thermometer, not our usual thermometer. If you don't have a thermometer, you can also test it with a chopstick. When small bubbles slowly appear around chopsticks, the oil temperature will be appropriate.
Step 9: Don't worry about cooking. First, put the fried cake in the colander, fry it in the oil pan until it is solidified, then take it out of the colander, and continue to fry it slowly with low fire until the fried cake floats and takes it out. Heat the oil pan with a big fire, and the oil temperature will rise. Then put it in the pot and fry until both sides are golden.
