Formula: mascarpone cheese 125g, whipped cream 60g, sweet cream 15g, milk 37.5g, sugar 37.5g, egg yolk 1, black coffee 20g, transparent film 1.5g, and proper amount of coffee nectar or brandy.
Production method:
1. Mas Capogni cheese is wrapped in plastic wrap, soaked in boiling water until soft, milk and sweet cream are cooked together, black coffee is added, and coffee is stirred until it is completely melted. Pour the cooked liquid on the egg yolk and stir it quickly while pouring to avoid scalding the egg yolk. Soak the bright film in clear water until it becomes soft. Put the soaked bright film into the egg yolk liquid and stir until the bright film is completely melted.
2. After the film melts, add a proper amount of coffee, manna, liqueur or brandy, and stir well for later use. Stir the softened cheese with an eggbeater to make a smooth and delicate cheese paste, add the stirred egg yolk paste and stir evenly, beat the whipped cream with a hand-held eggbeater, mix the whipped cream and the stirred cheese paste evenly, then pour all the raw materials into the mold and refrigerate for about 90 minutes.
Tip:
1. tiramisu cake is complicated to make, and all the raw materials must be prepared before making. There's no hurry if you do it again. When making tiramisu cake, transparent film should be used as coagulant. If there is no transparent film, you can use gelatin tablets or gelatin powder instead of agar to make tiramisu cake. Choose mascarpone cheese or cream cheese instead of cheddar slices and mozzarella cheese.
2. If the tiramisu cake is cut into pieces, it needs to be put into the lady finger and put into the cake mold.
