I'm going to name some of my favorite dishes based on recipes from Wikipedia.
Most people think of vegetarian recipes as the vegetarian versions of some traditional non-vegetarian recipes. For example, vegan omelets, vegan donuts, vegan cupcakes, and more.
However, as an Indian I am happy to be part of the tradition and have traditional vegetarian recipes even though no one realizes it.
Here are some of my favorite vegetarian dishes:
Dosa or Dosai (the D is pronounced as th in the)
An Indian rice and lentil dish A base crepe, usually served with fresh chutney and sauerkraut (all sides are also vegetarian).

Masaal Dosai
Sometimes stuffed with potatoes, it is called Masala Dosai

Uttappam
Made with the same batter as dosai, but as a pancake instead Crepe, it turned into a thick utapam. Typically, it's filled with onions, chopped tomatoes, and other vegetables—kind of like a rice pizza.
Crispy donuts made from shelled black lentils. These were not sweet but salty, but one could swallow half a dozen if served with coconut chutney and chutney.
