Jiangsu cuisine is one of the eight traditional cuisines in China. Because Jiangsu cuisine and Zhejiang cuisine are similar, they are collectively referred to as Jiangsu and Zhejiang cuisine. It is mainly composed of Nanjing cuisine (formerly known as Jinling cuisine), Huaiyang cuisine, Suzhou cuisine, Xuhai cuisine and other local dishes.
Nanjing salted duck
Jiangsu's famous dishes include Jinling fork roast duck, old duck soup, stewed raw chicken, roasted square, crystal trotters, stewed crab powder lion's head, stewed chicken in yellow mud, stewed chicken fu, salted duck (Jinling salted duck), golden fragrant cake, dried chicken soup, fermented bran, anchovies, three sets of ducks and Wuxi meat bones.
