Under the beautiful Cangshan Erhai Lake, there are hardworking, brave and hospitable Bai people scattered. In Bai people's homes, whether it is on holidays, birthdays, marriage between men and women, or guests coming to the door, the host will entertain guests with three kinds of tea that are "bitter, sweet and memorable". The white language of "Sancha" is called "Shao Daozhao", and the white language of the host of Sancha Tea Ceremony is called "Zaogubao", which must be held by an elderly and prestigious person in the family or clan. Now, first of all, let's have the first sip of tea-bitter tea.
"Bitter tea" is called "dry early" in white language, which means bitter. When boiling bitter tea, first put a special small casserole on a slow fire to heat it, then add the tea leaves and bake them slowly until they are brown and fragrant, and then pour them into boiling water to cook for a while to "die early".
The guest's personality "bitter tea" is very particular, and the teacup used to taste bitter tea is very small, called bull's-eye cup. Tea can only be poured into less than half a cup, as the saying goes, "wine is full of respect, tea is full of deceit." When the host presents bitter tea to the guest with both hands, the guest must also take the tea with both hands and drink it immediately. The roasted tea soup is amber in color and rich in aroma, but bitter in taste, which means the truth of being a man: "If you want to succeed in your career, you must first suffer hardships." After drinking the first sip of bitter tea, guests can eat melon seeds, pine nuts, peanuts and sweets on the table at will. The host began to prepare the second tea-sweet tea. The tea soup of the second tea is still cooked in the casserole that survived the first tea, but the difference is that the cow optic cup must be replaced by a small bowl or an ordinary big teacup. Put the brown sugar and walnuts into the cup, and the tea can be brewed to eight points. Use this second sweet tea to honor guests, which means: "Life is alive, no matter what you do, it will only be sweet if you eat bitterness." This tea is sweet and refreshing, with moderate shade. After tasting the second course of tea, the guests still have some refreshments to wait for the host to cook before three tea.
Before catching the three teas, the host put a spoonful of honey and 3-5 peppers in the bowl (cup). Some hosts also added a baked yellow milk fan (a special food made of milk), and then rushed people to boil the boiling water. The capacity of the cup is appropriate for half a bowl. When the guest receives the host's former three tea, he should shake the tea bowl to make the tea soup and seasoning mix evenly, while "whirring" and tasting tea while it is hot.
