Prepare the ingredients: eggplant, cowpeas, dried chili.
2/6 Cut the eggplant into strips and set aside on a plate.
3/6 Cut the cowpeas into pieces and the dried chili into diamond shapes, put them on a plate and set aside.
4/6Add some oil to the wok, turn up the heat, when the oil is hot, put the dried chili peppers in the wok and sauté them to make them fragrant, pour the cowpeas into the wok and continue to sauté for two minutes.
5/6 Pour the eggplant into the pan as well, stir fry for another two minutes, add salt and chicken essence, ready to serve.
