As for the origin of the name Running Crab, there is a saying that the former scholars were poor and could not afford crabs. What should they do when they are greedy? There are only eggs at home, so I cook two dishes, one of which is fried eggs, which tastes like crabs, even more delicious than crabs!
So, this is where the crab race comes from! The scholar is also proud, and gets spiritual pleasure from it. Crab race is a dish with yellow croaker as the main ingredient, eggs, various seasonings and fried. Yellow croaker fish is as white as crab meat, and eggs are as golden as crab yellow. The fish eggs of this dish are soft, tender and delicious, which is better than crab meat, hence the name "Running Crab".
Practice of crab race:
Ingredients: fish 200g, eggs 250g, peanut oil100g, wet starch10g, sesame oil 5g, clear soup100g, Shaoxing wine 20g, Jiang Mo 5g, monosodium glutamate 4g, chopped green onion 5g, refined salt 3g and vinegar/kloc.
1. Wash the fish and cut it into small strips. Add Shaoxing wine, monosodium glutamate and salt for a while, then add egg white, wet starch and paste for later use.
2. Fill the spoon with oil, heat it to 50% to 60% heat, put the pulped fish sticks into the spoon, and then pour them into the colander to control the oil.
3. Put the eggs in a bowl and stir well. Pour the smooth fish sticks into a bowl and stir well together. Mix Shao wine, monosodium glutamate, salt, clear soup and wet starch into a thick paste.
4. Heat the oil with a spoon, pour the fish sticks and egg liquid into the pot, stir fry until cooked, then add a bowl of sauce, stir well and pour sesame oil. Serve with ginger vinegar juice.
