I. Materials
3000g of soybean, ginger 1 slice, pepper1slice, 2 pieces of cinnamon, star anise15g, 20g of dried pepper and 20g of salt.
Second, practice.
1, wash the soybeans, soak them in clear water for more than 5 hours (the time should be controlled according to the temperature, in short, soak the soybeans until soft), and then put them in a pot to cook. 2. Take out the cooked soybeans (no need to dry them in the sun), put them directly in a container while they are hot (it is best to use that kind of crock container), then seal the container, preferably cover it with something like a quilt, keep the temperature at least above 10, and leave it for 7- 10 days until the beans become sticky strips when picked with chopsticks, which means success.
3. Prepare proper amount of seasoning: ginger slices, pepper grains, cinnamon, star anise, dried peppers, etc. Boil the above seasonings with appropriate amount of seasoning water, then add salt, stir well, seal again, and eat in about a week.
