1, be sure to buy fresh mutton, the smell will be slightly less, and it is best not to buy stale mutton no matter how cheap it is. After buying mutton, we don't worry about cooking. First, we cut the mutton into small pieces and then soak it in water.
2. After the mutton is soaked for 1 hour, you will naturally see that the blood inside is soaked out and the water becomes particularly turbid. In this way, you can rinse the mutton again, then cut the ginger and green onions for later use, and then you can prepare for cooking.
3. Pour enough cold water into the pot, then put the mutton in, add a few slices of ginger and blanch it, remove it and rinse it with warm water.

5. Boil the water in the pot with high fire first, and then stew it with low fire for 40 minutes. Don't mess with seasonings when stewing mutton. To taste delicious and not fishy, we only need to add five ingredients, namely, onion, ginger, pepper, salt and pepper. Onion, ginger and pepper are mainly used for deodorization, while salt and pepper are used for seasoning.
