The method of making sweet wine is as follows
1. Wash 500 grams of glutinous rice and soak it in water for a day and night until the rice can be crushed by hand. Control the water and set aside.
2. Fill the steamer with water, cover it with an oil-free cage cloth, turn on the heat, wait for the water to boil, pour the soaked glutinous rice into it, cover the pot, and steam over medium heat for 25 minutes until cooked. Finally, turn off the heat.
3. Take 4 grams of sweet rice wine, put it into warm water (200 ml), mix well, and set aside.
4. Pour the steamed glutinous rice into a clean and oil-free sealed box, use chopsticks to break up the glutinous rice grains, cool it until it is warm to your hands, pour in the homogenized sweet wine koji water, and mix thoroughly .
5. Use a spoon to dig a round hole with a diameter of 3 cm in the middle of the rice and cover it with a sealing lid.
6. Wrap it in cotton cloth and place it on a radiator (about 35 degrees) and ferment for 36-40 hours. 7. When the time is up, open the lid and smell the aroma of wine.
