Steps:
1. First, grab the shredded pork evenly with 3 spoonfuls of water starch and size it. (water starch = 1 starch +3 water) Large and small shredded pork can keep the moisture of shredded pork, and the fried shredded pork tastes smoother and tender.
2. Shred green bamboo shoots, shredded soaked fungus, minced onion and garlic, and minced pickled pepper.
3. Heat oil in a pan, add shredded pork, stir fry quickly, pour in a spoonful of oyster sauce, stir fry shredded pork until it changes color, pull it to one side of the pan, add pickled pepper powder, ginger and garlic powder, stir fry together, stir fry with low fire, pour in a spoonful of balsamic vinegar, add half a spoonful of sugar, add shredded green bamboo shoots and shredded auricularia, turn to high fire and stir fry quickly for a few times.
Second, lettuce braised pork
Ingredients: 300g of lettuce, 300g of pig's hind legs with skin, 30g of Pixian watercress, 3 cloves of garlic, 5g of ginger10g, 5g of pepper, 5g of mash juice15ml, 5g of brown sugar, 30ml of soy sauce, 3g of salt, 5g of coriander, and 5g of oil10ml.
Steps:
1. Cut the pig's hind legs into pieces of about 3 cm. Remove the old skin from lettuce, cut off the roots and cut into hob blocks of about 3cm. Break garlic cloves and whole ginger for later use.
2. Put the water into the pot, bring it to a boil, blanch the pork pieces, and then drain the water.
3. Put the oil in the pot, heat it to 40%, then add the pork pieces and stir fry until the fat is yellow on both sides. Then add mashed potato juice and Pixian watercress and stir-fry for a while. Add a proper amount of water, then add pepper, brown sugar, soy sauce and salt to boil.
4. stew until the meat is rotten, then put the vegetables in, stew for 20 minutes, put them in, and add chopped parsley.
Third, cold lettuce silk
Ingredients: 2 lettuce, 3 teaspoons of salt, 2 tablespoons of onion oil and 2 teaspoons of sugar.
Steps:
Peel lettuce with a planer (cleaning the white stems will affect the taste), shred with steel wire, and marinate with 5g salt for about half an hour. Pickled lettuce looks crisp (the pickling time should not be too short, the water in the lettuce will be pickled, and if the pickling is not complete, water will still come out after stirring, which will affect the taste), and the pickled lettuce will be fully squeezed out (the extrusion taste is good).
