1. Wash the elbow and tie it tightly with a string.

2. Blanch them in water. Blanch the blood out of the elbows.

3. Wash the blanched elbows with water to wash off the froth on top.

4. Put water in the pot, add salt, star anise, peppercorns, scallions, red pepper, cooking wine, vinegar, and put the blanched elbow into it.

5. Boil on high heat and then change to low heat and simmer for 2 hours.

6. Use chopsticks to poke the elbows, if you can pierce through, the elbows are cooked.

7. Cut off the threads from the cooked elbows, cut into slices, plate, top with salt, scallions, miso, thirteen spices, pour soy sauce on top, and place in a pot to steam for 10 minutes.

8. After steaming, mix the seasoning on top with the elbow meat and you can eat it
