Main Ingredients: Fresh Chicken Wings (Wing Middle and Wing Root), Small Red Dried Chili Peppers Cut in Sections (a lot), Peppercorns (a lot), Segments of Onion, Slices of Ginger, Slices of Garlic, Soy Sauce, Salt, Cooking Wine, and Flour.
Practice
Wash the chicken wings and make several cuts on the surface with a knife, marinate with cooking wine, salt, soy sauce, green onion and ginger for 30 minutes. Fish out the green onion and ginger slices, then sprinkle with a thin layer of dry flour and scrub well, paying attention to just a little bit of flour.
