Water stored for too long will be infected by bacteria and produce nitrite. Once nitrite enters the human body in large quantities, it can make tissues anoxic, cause nausea, vomiting, headache, palpitation and other symptoms, and even make people die of hypoxia. Nitrite can also form nitrosamines in human body, which can promote liver cancer and gastric cancer. After the boiling water in the thermos is heated, the bacteria multiply faster and reduce more nitrite.
