1. Chinese cabbage and pork jiaozi
Composition:
Pork, Chinese cabbage, Jiang Mo, salt, soy sauce, raw flour, sesame oil.
Stuffing skills:
(1) Wash the pork, chop it into minced meat and put it in the pot. Add Jiang Mo, salt, soy sauce and corn flour into the stuffing in turn, and stir well while adding.
(2) Slowly add a small cup of clear water to the meat stuffing, stir in the same direction with chopsticks while adding water until the meat stuffing is gelatinous and makes a noise, and put it in the refrigerator for refrigeration.
(3) Chop the cabbage, add salt, mix well, stand for 15 minutes, squeeze out excess water, and add sesame oil and mix well.
(4) Pour the cabbage and meat together and mix well.
Tips:
If the mixed pork stuffing with cabbage is too damp, put it in the refrigerator for a while before using it.
2. Sauerkraut stuffing jiaozi
Composition:
Sauerkraut, refined pork belly, chopped green onion, Jiang Mo, soy sauce, chicken essence, salt, pepper, sesame oil and oil.
Stuffing skills:
(1) Wash the pork belly, chop it into minced meat, and put it in a basin. Add soy sauce, chopped green onion, Jiang Mo, chicken essence, salt, sesame oil and oil in turn, and stir well while adding.
(2) Pickled sauerkraut is washed, chopped and juiced.
(3) Heat oil in the pot, add a little pepper, stir-fry the fragrance, and take it out. Saute sauerkraut in the pot.
(4) After the sauerkraut is cooled, pour it into the meat and mix well.
Tips:
Before pickling sauerkraut, it is inevitable that there will be sediment. Be sure to wash it several times before cutting.
3. jiaozi with minced meat
Composition:
Refined pork belly, eggs, chopped green onion, Jiang Mo, salt, chicken essence, thirteen spices, pepper, scallion oil, sesame oil, soy sauce and light sauce.
Stuffing skills:
(1) Wash the pork belly, chop it into minced meat, and put it in a basin. Add Jiang Mo, egg, soy sauce and soy sauce into the meat in turn, and stir well while adding.
(2) Add salt, chicken essence, thirteen spices and pepper into the meat stuffing in turn, and stir evenly while adding.

Tips:

Special jiaozi Zhanjiang
Composition:
Vinegar, Chili powder, onion, garlic, soy sauce, sesame oil, cooked sesame seeds, salt.
Compound skills:
(1) Wash garlic, mash it, wash onion, chop it into powder, put it in the first bowl, add salt and mix well.
(2) Take the second bowl and add Chili powder. Heat the oil in the pan, stir-fry the fragrant peppers with low heat, remove and throw them away. Pour hot oil on Chili powder to make Chili oil.
(3) Pour the aged vinegar into a hot pot fried with pepper and heat it to boiling.
(4) Pour the hot vinegar into the third bowl, then add the soy sauce, sesame oil, cooked sesame seeds and warm water in turn and stir well.
(5) Pour the three bowls into a large bowl, and stir evenly to make the secret jiaozi dipping sauce.
