Why is the cake not fluffy when steamed in a rice cooker?
Many people will find that the cake is not fluffy at all when using a rice cooker to steam it. Why is this?
The main reasons why rice cooker steamed cakes are not fluffy are as follows:
1. Wrong use of flour.
Be sure to use low-gluten flour when steaming cakes in a rice cooker. If there is no base flour, you can also use a mixture of regular flour and cornstarch at a ratio of 3:1.
2. Excessive use of liquid materials.
When using water, eggs, milk and oil, you must control the proportion. More is not always better, especially the amount of water or milk cannot be too much, otherwise the dough will not rise.
3. The protein mixture is incorrect.
After the egg whites are completely beaten, when mixing them with the egg yolk paste, be sure to use a flat shovel to turn it up from the bottom. Do not stir as you would when beating egg whites. Generally, mixing is enough for about 1 minute. Be careful not to mix for too long.
4. Baking powder can be added
