Classic Madeleines
Ingredients?
1 egg
50g powdered sugar
Vanilla extract 3-4 drops
Half lemon zest
50g low-gluten flour
50g unsalted butter
Baking powder 1.5g
1/2 teaspoon salt
How to make classic madeleines?
First put the tutorial in a place for easy reference^_^
Crack in the eggs (the picture is for three people, one person can use 1 egg to make a full mold)
Beat the eggs evenly without beating them, add the powdered sugar in 2-3 times, and stir evenly
Grub in the lemon zest, add vanilla essence and salt, and stir evenly
Add sifted low-gluten flour in 2-3 times, and stir into a uniform batter without particles
Cut the butter into 1-2cm squares and put it in the microwave to defrost until it is completely melted. Add the batter while it is hot and stir evenly until it becomes a smooth batter
Pour the batter into a piping bag and do not use it. Use a decorating head and squeeze it into the madeleine mold until it is eighty full. Pop out any air bubbles in the batter.
Place in an oven preheated to 180 degrees and bake at 180 for 13 minutes
Take out and unmould
Cutely place on the plate
Sprinkle with powdered sugar, and the decoration is successful~
You can also make it into a mini version, one bite at a time. The oven temperature does not need to be adjusted, but the baking time should be reduced to 9 minutes to avoid burning
The advantage of the mini version is that you can put it in a cookie bag and give it away~
