One: fish head tofu soup
1. Prepare the cleaned and pickled fish head, then cut the tender tofu into cubes with the size of 1 cm, slice the ginger pieces, and cut the green onions into sections for later use.
2. Cool the oil in a hot pan, put the fish head in, and fry the fish head on low heat until it is slightly yellow and moisture-free.
3. Fry the fish head well, add cold water, add sliced ginger, add appropriate amount of cooking wine to the onion, and then turn the fish head a few times. First, let the seasoning blend well in the pot. Second, let the cut surface of the fish head face down so as not to damage the skin of the fish head when stewing.
4. Bring the water to a boil, then add the chopped tofu, pepper and some chicken essence. We don't need to add salt here, because the salt has penetrated into the fish head when we pickled it. So after the seasoning is added, simmer for 30 minutes, so that the delicious fish head tofu soup is ready.
