Crispy Chopped Pepper Fish Directions ?
Clean the fish and marinate for 30 minutes with wine and a pinch of salt.
Cut the ginger and garlic into pieces and set aside, cut the green onion into julienne strips and set aside.
Put the oil in the pan, a little more, and when the oil heats up to 60%, put the fish in the pan and start frying.
Fry the fish until it is cooked, then remove the fish from the pan and leave some oil in the bottom of the pan, then pour out the excess oil.
Fire the garlic and ginger, add the chopped pepper sauce, stir fry the aroma and add hot water (the amount of water should be able to not over the fish) Add sugar, vinegar, a little soy sauce (coloring).
Put the fried fish into the pot and cook on low heat for more than 30 minutes, do not drain the soup in the pot.
Pour the sauce into the pot to thicken the soup, then add two tablespoons of oil and pour it into the fish on the plate, sprinkle with green onion.
Tips
The longer the fish cooks, the more flavorful it will be, and if you have time, you can add enough water to cook it over low heat for a long time.
