[Practice] Wash and soak sauerkraut 1 hour. In this way, soak some salt, otherwise it is too salty; Sauerkraut will taste if you buy it in the vegetable market. Cook in the pot for a few minutes before soaking.

3. When the oil in the pot is 50% hot, add onion, ginger, garlic, red pepper and star anise and stir-fry with sauerkraut.
4. Then add the trotters, add water to the trotters, and simmer on low heat after the fire is boiled 1.5 hours. After an hour and a half, add a little soy sauce and salt, stew for another half an hour, and then collect the juice on high fire.
First, the pig's trotters should be depilated and washed, and then the dirt on the surface of the pig's trotters should be scraped off with a kitchen knife, especially the gap between the toes of the pig's trotters.
Second, cut the washed trotters in half, then cut them into small pieces according to the joints (the place where trotters are sold can help you cut them into small pieces now), and float them in the water for 20 minutes to remove blood.
Third, add water to the saucepan and boil it. Add chopped ginger, jujube, medlar and chopped pig's trotters, and stew in a pot. When the water boils for about 10 minutes, remove the floating foam from the noodle soup.
Fourth, simmer for about 1 hour, add kidney beans and simmer until the trotters are soft, add appropriate amount of salt and monosodium glutamate, and finally sprinkle with chopped green onion.
