The method of making sweet and sour pork ribs is as follows: 1. First chop the ribs into small pieces, cut a few slices of ginger, then start the fire, put a large bowl of water to boil, after the water boils, add ginger cooking wine or Beer, mainly to remove the smell. Then pour in the pork ribs and blanch them, and keep boiling for as many minutes as possible.
2. After blanching, take out the water, pour oil into the pot, add rock sugar (here depends on your personal preference for sweetness), change to low heat, stir-fry until the rock sugar is light brown, then pour in the ribs, and turn to high heat , stir-fry evenly. Pour in light soy sauce, vinegar, and salt. Stir fry a few times. Then add water until the water level is even with the ribs. Cover the pot!
3. After boiling, simmer for a few minutes, then open the lid and slowly reduce the juice. The color will be light at first, but the color will come out later when the juice is reduced. Remember to stir-fry more and more as you go. If you like chopped green onions, you can add some when cooking at the end.
