= = = = Grilled sparerib Home Edition = = = =
Prepare ingredients: ribs, onion ginger, cooking wine, Chili powder, cumin powder, spiced powder, salt and monosodium glutamate, and white sesame.
Method of making: 1. Wash the ribs, chop them into long pieces of 6-7 cm, put them in a small pot, add the onion, ginger, cooking wine, allspice powder, salt and monosodium glutamate, mix well, and put them in the refrigerator for 2 hours. Take out the marinated ribs, pick out all the onions and ginger, add Chili powder, white sesame seeds and cumin powder and mix well. Cut the tin foil into square pieces with a length of about 10 cm. Wrap the ribs.
2. Preheat the oven to 200 degrees, put the wrapped ribs on the baking tray and bake in the oven for about 40 minutes. Roasting spareribs in a domestic oven can't be as tender outside as barbecue, because the power of the oven is small. If the surface is roasted dry and fragrant, the meat of spareribs will stick to the bones, and the effect of deboning can't be baked. At the same time, too much water is lost, and the taste of ribs will become hard and difficult to bite down.
Tip: the ribs need to be marinated for a long time, and the time is too short to taste easily. The original baking time is not as long as the stewing time, and it is even more difficult to taste if it is not wrapped in tin foil. Because the smell of salt will come out with the gravy, and the smell of gravy and spices wrapped in tin foil will be absorbed back by the meat, so the grilled ribs will be very tasty. Onion and ginger can't be roasted with ribs, and the amount of spiced powder should be less, just a little.
Summary: 1. There are two ways to bake ribs in the oven at home. The first way is to bake them raw, which I shared above, and then marinate them before baking them. The ribs roasted in this way are more tasty. Another is to stew the ribs first, and then roast them, so that the roasted ribs are like barbecue. After roasting, sprinkle seasoning on them and bake them for about two minutes. The flavor of the roasted ribs will be concentrated on the surface of the meat.
2. The maximum temperature of the domestic oven does not exceed 250 degrees. Unlike the commercial oven in the kitchen, the oven used in the kitchen can reach 320 degrees. Therefore, it is best to wrap tin foil when baking meat. On the one hand, it can prevent water loss, on the other hand, it can avoid dirtying the oven, saving the trouble of bad cleaning. Home ovens are best used for baking, and occasionally barbecue is enough.
