Ingredients: One small rooster (1000g), one piece of ginger, six green onions, a little rice wine, and appropriate amount of salt.
The method is as follows:
1. Wash the slaughtered rooster, cut it into small pieces, blanch it in a pot with cold water, rinse it and drain the water.
2. Peel, wash and slice the ginger and green onions.
3. Put the filtered rooster into a large bowl, add appropriate amount of salt and rice wine, mix well, and put the ginger and green onion slices on top.
4. Put cold water in the pot, put the large bowl into the pot, and cover it with a plate to prevent steam water from dripping in. Cover the pot, bring to a boil over high heat, then turn to low heat and steam for another hour.
Note: When steaming at the beginning, do not put too much water, otherwise it will overflow into the bowl after the water boils and affect the taste of the steamed chicken.
