1, grab autumn fertilizer
Northeasters usually "grab autumn fat" in early autumn, hoping to eat more meat and gain more weight. Shandong people also have the custom of eating jiaozi on this day, which is called "grabbing autumn fat". I'll grab a jiaozi from your bowl, so that I can keep fit in autumn and make up for the oil and water lost in summer.
On the same day in beginning of autumn, elderly people will provide a bowl filled with whole grains in the middle of the hall and put three incense sticks on it to pray for a bumper harvest after beginning of autumn. Most people will chop up meat and wrap it in jiaozi after beginning of autumn, and the whole family will get together to "bite the autumn".
If you have time to go to the kitchen to eat jiaozi yourself, you might as well make some efforts when mixing noodles. And bread jiaozi, add 1 egg per 500g flour. The protein content of the noodles thus mixed will increase. When wrapping jiaozi, you will find that the noodles in your hand are not "competitive" and easy to pinch. When jiaozi cooks in the pot, protein will shrink and solidify, making the dumpling skin strong and not easy to stick. In this way, jiaozi will not "mess up the soup" after cooking; Jiaozi won't "lump" together after cooling. You can add some vinegar to the water to make the meat cook faster.
Step 2 lose weight in autumn
There is a custom of eating cucumbers in early autumn in northeast China. I hope people will stay slim forever. There is a saying in beginning of autumn that "fat people eat cucumbers and thin people eat meat", which shows that eating cucumbers can reduce weight.
Summer weather is hot, energy consumption is high, and people generally lose appetite, resulting in insufficient heat supply in the body. When the weather turns cold in autumn, people's taste is enhanced, their appetite is greatly increased, their diet will be unconsciously excessive, and their calorie intake will be greatly increased. Coupled with the pleasant climate, people get enough sleep and sweat less. In addition, in order to meet the arrival of winter, the body will actively store cold-proof fat, so the body absorbs more heat than it discharges.
In autumn, people get fat carelessly, which is a threat to obese people. Therefore, obese people should pay more attention to losing weight in autumn. First of all, we should pay attention to the adjustment of diet and eat more low-calorie diet foods, such as cucumbers, red beans, radishes, bamboo shoots, coix seed, kelp and mushrooms. Secondly, we should increase the amount of activities to achieve the purpose of losing weight.
Rural Folk Custom in Northeast China —— Building a Fire Kang
In the northeast rural area of China, the custom of building a fire kang in beginning of autumn has a long history. So, how did this custom form? This is not only determined by the climate in the north, but also originated from the agricultural activities in the northern rural areas in the past dynasties-wheat harvest. There is a folk saying that "wheat is not subject to dog days". Under normal circumstances, wheat is harvested between the first volt and the second volt. Because, this period is the best period of wheat grain maturity, after this period, wheat is easy to lodging and fry.
Therefore, when the solar term comes to summer and is about to enter the dog days, the wheat harvest activities in the northern rural areas have already come to an end. After the wheat harvest, farmers choose to dry and scatter the wheat in dry and rainy weather, and then mix the scattered wheat residue (the foreskin outside the wheat ears) with clean loess, add water and stir it evenly to make mud, and wipe it on the wall outside the mud hut, which is both windproof and rainproof.
However, the most fashionable is Kang in the countryside. Every season in beginning of autumn, the climate is cool, the air circulation is good, there is no heat in summer, and the rain is getting less and less, so it is suitable for building a kang in rural areas. At this time, the skilled clay tile craftsmen among the villagers came in handy. People use local materials, mix wheat bran into pure loess, add water and stir to make rectangular adobe with a length of 40 cm and a width of 20 cm. After drying, pile them up and cover them with tarpaulins for use when building kang.
At this time, the corn in the field has sprouted and embroidered, and the seeds are mature and completely edible. Women put a few pieces of wood on the stove, sent men to their own fields to break off a bunch of tender corn, peel off the skin, take off the stigma (beard) of corn, put it in a large iron pot, cover it with a layer of light green corn leaves to make the tender corn taste more delicious, and put some new potatoes and fresh eggplant on the way.
When the pot boils for a while, take out the potatoes and eggplant first, so as not to get mushy for a long time, and then after a quarter of an hour, the room will smell thick corn on the cob. At this time, remove a few ears of green corn from the pot and cut a plate of salted cucumber. Potatoes and eggplant are mixed with garlic sauce and Chili sauce, and the corn is eaten. In the absence of other rice, this is the best time for farmers to be green and yellow.
