The highest possible hourly turnover for a restaurant is calculated as the Ultra High Turnover Ratio. According to the table above, the ultra-high average is 412, to take an approximation, the reported turnover ratio is 400.?

d. Determine low, medium and high turnover ratios? Observe turnover trends to identify the most common hourly turnover. Based on the daily turnover trends, determine the low, medium, and high turnover ratios.?
