Hot and Sour Vermicelli
A basin of cold water

First take out the hot and sour vermicelli and put it into cold water and soak it for about 30 minutes

Then pour away the cold water, and then pour warm water at about 40-60 degrees into the basin with the vermicelli and soak it for about 2-3 hours.

Adjust the soaking time as appropriate according to the actual temperature difference in each city. For example, the soaking time is different in summer and on snowy days in the north where the temperature is low. After soaking, pick it up and set aside for cooking. If you need to cook it, put the vermicelli in the pot and cook for about 1 minute. When all the vermicelli floats to the surface of the boiling water, cook it until it is soft and cooked. Then you can pick up the vermicelli and prepare it in advance. There is a bowl with seasonings in it, stir it evenly and you can eat it.
