Detailed production process:
Step 1: First, put water and brown sugar in a small pot, bring it to a low heat, and use brown sugar to completely melt it;
Step 2: After the brown sugar is completely melted, continue to simmer, pour cassava starch into the pot, and stir quickly with chopsticks or a silicone scraper until there is no dry powder;
Step 3: until the brown sugar water and cassava starch in the pot are mixed into dough, which is no longer flowing, turn off the fire and take the dough out and put it on the kneading mat;
Step 4: Buckle a bowl on the dough to keep it moist. After the dough is not hot, knead it by hand until it is smooth and soft. In the process of kneading, if you feel a little dry, you can dip some water in your hands and then knead the noodles; If you think the dough is too soft, put some dry tapioca starch on your hands and then knead the dough. In short, the dough finally kneaded is smooth and non-sticky;
Step 5: Knead the kneaded dough into slender strips;
Step 6: Cut into small grains with a knife, because the cut surfaces will stick together. Sprinkle some cassava starch and mix well to prevent sticking.

Step 8: Boil water in a small pot, and cook the rubbed pearls in boiling water;
Step 9: Cooked pearls are darker in color, and the more brown sugar is added, the darker the pearl is, and vice versa;
Step 10: Prepare a bowl of cold boiled water or pure water, and take out the cooked pearls and put them in the water, so that they can be anti-sticky and taste Q-elastic;
