Eggplant stewed with potatoes is a very common home-cooked dish. Each family has its own way of doing it. The more common ones are as follows:
Method 1:
Ingredients preparation: potatoes, pork, green onions, ginger, dried chili peppers, coriander, condiments
Production steps:
1. Peel the potatoes and wash them with a hob. Soak in clear water.
2. Wash the eggplant, break it into pieces and set aside.
3. Slice the pork, cut the dry red pepper into small pieces, and cut the onion and ginger with a knife and set aside.
4. Put a small amount of oil in the pot, pour in the lean meat and stir-fry.
5. Stir-fry the meat slices and add onion, ginger and dry red pepper.
6. Saute a small amount of pepper powder until fragrant.
7. Pour in the eggplant and fry slowly over low heat.
8. Fry the eggplant until cooked, then add the potatoes and continue to fry for 2 minutes, then pour in the soy sauce.
9. Add water to the pot to cover the potatoes and eggplants.
10. Low heat, cover the pot and simmer until the potatoes and eggplants are thoroughly rotten, add seasonings and serve.
Method 2:
Ingredients preparation: eggplant, potatoes, colored peppers, chopped green onions, lard, salt, chicken essence, 400 ml of stock.
Preparation steps:
1. Wash the bell peppers and cut them into small dices. Wash the potatoes and eggplants, peel them, cut them into pieces, and cut the green onions into flowers.
2. Pour lard into the pot. When the oil is hot, add chopped green onion and stir-fry until fragrant. Add potatoes and eggplant pieces and stir-fry. Then pour in broth and cook over high heat for 30 minutes.
3. Boil the potatoes and eggplants and add the bell peppers. Stir well and then add salt and chicken essence to taste.
Method three:
Ingredients preparation: eggplant, potatoes, green peppers, red peppers, condiments
Production steps:
1 Peel and slice potatoes, slice eggplant, dice green and red peppers, cut onions into flowers, and cut garlic into small pieces.
2. Pour soybean oil into the pot and heat it slightly. When the oil is hot, add chopped green onion and stir-fry until fragrant. Add potatoes, eggplant, soy sauce and stir-fry for about 10 minutes.
3. After the potatoes and eggplants are cooked, add red pepper and salt.
