Maltose is made from sorghum, barley, corn and other starches, and needs to be fermented and saccharified. Its main function is as a nutrient, and maltose is mainly made of wheat and glutinous rice.

Maltose is generally maltose pancreas or maltose syrup, which belongs to starch sugar and has a long production history. Maltose is two glucose units linked by-1, 4 glycosidic bond.
Maltose property
Maltose is a colorless crystal, usually containing one molecule of crystal water. Melting point 102℃, easily soluble in water, and the sweetness is 40% of sucrose. There are α isomer and β isomer.
The ratio of α -maltose to β -maltose in aqueous solution is 42: 58, and the molecular formula of crystalline β -maltose containing one molecule of water is β-c12h22o11H2O. If crystal water is removed, β -maltose will be converted into α-maltose, so it is not easy to obtain anhydrous β -maltose.
