2. Bake and take a dry bath. (1) First, the mushrooms are divided into three categories: large, medium and small, and put into the baking tray respectively. When putting mushrooms, the mushroom cover is facing up and the mushroom handle is facing down, which are arranged in turn. When baking, put the big one on the top layer and the small one on the bottom layer. (2) When firing, the firepower should be low first and then high, not too fierce. Start burning to 30℃, and then raise the temperature to 5℃ every 3-4 hours. Finally, keep it at 60℃, and the maximum temperature should not exceed 65℃, then roast the mushrooms and scorch them. However, the firepower should not be lower than 55℃, so as to avoid the mushroom blackening due to the long baking time. (3) When the shiitake mushrooms are roasted to 80% dryness, they are taken out of the curing barn and placed in a dry place, and each baking takes 12- 18 hours. (4) Firewood, coal fire and charcoal fire can be used in the drying oven, but the drying room must be smokeless and flameless, and it is best to have a radiant iron plate device and exhaust equipment to prevent the mushrooms from being baked black and ensure the quality. Electrothermal dehydration and drying can be carried out with reference to this method.

3. Combination of drying and baking. The combination of sun drying and mushroom drying can reduce baking equipment and ensure the quality of mushrooms, and is also suitable for large-scale production and small growers. The method is as follows: firstly, the mushrooms are dried to be semi-dry, and then transferred to the fire in time for baking until they are completely dry. In rainy days, if the baking equipment is limited, you can put the mushrooms on a ventilated dry pad or floor to dry before baking. The combination of sun drying and baking can make use of the mushrooms baked by people on the home stove, which are also good in color and strong in fragrance.
