Fuzhou's famous dish, a kind of stuffed fish balls, originated in the early years of the Qing Dynasty. The custom in Fuzhou is to hold a banquet where the guests have to "clip the wine bag". Fishballs are included in the "wine bag", and now there are also small fishballs without filling.
