Main raw materials: dried fish, meat or ribs, rock sugar, star anise, clove, cooking wine, soy sauce, olive oil, dried pepper, onion, ginger and garlic.
Exercise:
1. Add appropriate amount of water to the pot, add ginger slices, meat or spareribs, bring to a boil with strong fire, blanch for 2 minutes, take out spareribs and drain.
2. Soak the dried puffer fish in warm water until it becomes soft (about half an hour).
3. Cut the puffer fish into diamond-shaped pieces, with onion and garlic for later use.
4. Add proper amount of olive oil, fried ginger slices, cloves, star anise and dried peppers to the pot.
5. Then add the drained ribs, stir fry, add some cooking wine and bring to a boil.
6. Transfer the ribs together with the soup to a casserole, and add rock sugar 1 1. Add appropriate amount of soy sauce, cover, bring to a boil and simmer for 20 minutes.
7. After that, add the chopped dried puffer fish and continue to simmer for about 1 hour until the soup is only 1/3.
