Methods of making Cocoa Puff Pastry
Step 1
First, let's make the cocoa shortcrust pastry: sift 100g of low gluten flour and 5g of cocoa powder.

Soften 80g of butter at room temperature and put in powdered sugar.

Mix them well.
Step 4
Pour in the sifted powder, and mix with a pressing method, from the bottom up, until there is no dry powder.

You can use plastic wrap or a plastic bag to organize the puff pastry into a cylindrical shape, and put it into the refrigerator to set.

The next part is to make the puff pastry: 50g of Anjali butter, 100g of water (or milk), 2g of sugar and 1g of salt in a small saucepan.

Heat the saucepan over high heat and bring to a boil. Boil for about 1 minute, then pour in the sifted 63g of low gluten flour. Stir quickly until there are no particles, turn off the heat.

When the batter is placed in a lukewarm state, you can beat the eggs into it (the egg mixture can be stirred well in advance and added in small quantities to avoid too much.)

Lift the batter into an inverted triangle, and finally stir until smooth and silky.

Place the batter into a laminating bag, choose your favorite laminating nozzle, and squeeze out shapes on the baking sheet.

Take out the refrigerated cocoa puff pastry, cut it into about 0.5cm thickness and cover the puff body.

Preheat the oven to 200 degrees Celsius and bake for about 15 minutes to set. (Increase or decrease the time appropriately according to the puff's expansion.)

After the puffs are done, turn the upper and lower heat to 180 degrees for about 20 minutes to color.

While baking the puffs, use this time to whip the cream. Prepare the light cream.

Whip 60g of Anjali light cream and 20g of powdered sugar until laminating.
