Dried bamboo shoots and duck soup
Ingredients: 1 duck leg, 100g soaked dried bamboo shoots
Accessories: appropriate amount of onion and ginger, appropriate amount of salt, pepper Appropriate amount of powder, 3g of pepper, 2 bay leaves, 5ml of white wine
Steps
1. Soak the dried bamboo shoots for 5-6 hours in advance and prepare all the ingredients.
2. Wash the duck meat and blanch it in cold water.
3. Add appropriate amount of hot water to the soup pot, then add onions, ginger, pepper and bay leaves.
4. Add white wine.
5. Add duck meat.
6. Add dried bamboo shoots.
7. Bring to a boil over high heat, cover and simmer.
8. Simmer for 1 hour and add salt.
9. Add pepper to taste.
10. Add a little chicken essence and turn off the heat.
Tips
You can also use the whole duck to make soup. I have a small family so I only used duck legs.
Dried bamboo shoots should be soaked in advance. You can blanch them in boiling water before making soup. The taste will be better.
