Making Ingredients
Pork ribs, sweet potatoes, Sichuan spicy bean paste, light soy sauce,
garlic, wine sauce (no wine can be used as a substitute), sugar, salt, chicken broth, steamed meat, rice flour, scallions, cooking oil
Procedure
1. Slaughter the pork ribs into 3-centimeter-long segments, sweet potatoes peeled and diced, garlic and scallions minced.
2. Add bean paste, a little soy sauce (mainly for color), garlic, wine juice, a little sugar, chicken broth, a little salt,
cooking oil (as much as the oil used to cook so many ribs) to the ribs, mix well and then pour in the steamed rice flour, so that each rib is evenly coated with a layer of rice flour.
3. Take a steamer basket, put a layer of cut sweet potato cubes underneath, and then lay the ribs on it, and steam on high heat for 45-60 minutes, and finally sprinkle chopped scallions on it.
Precautions
The bagged steamed meat noodles sold outside are already salted, and the bean paste itself contains a fair amount of salt, so be careful when adding salt to the ribs, and add it in small amounts.
Sweet potatoes, potatoes, bean sprouts, peas, etc. don't have to be used as a base.
If you don't have a steamer, you can use a bowl instead and put it directly into a pot of water, submerging the water to half the height of the bowl. Don't forget to add water to the pot every now and then while steaming to prevent it from drying out.
If you are steaming in a bowl, remember to add boiling hot water, otherwise the bowl will explode when it gets cold or hot.
