Step 1: The materials we prepared are: glutinous rice flour 90g, sticky rice flour 80g, refined rice flour 40g, milk 370g, sugar 70g, corn oil 40g, and a proper amount of cooked glutinous rice flour.
Step 2: Pour the milk, corn oil and sugar into the dish and stir well. Just stir and dissolve the sugar. Then add glutinous rice flour, sticky rice flour and boiled rice flour, and stir well.
Step 3: stir and sieve once, then let stand for 30 minutes.
Step 4: It's almost time to stand up. We prepare a larger pot, add a proper amount of water, put it on the shelf, then put the prepared paste in, cover the surface with a plate to prevent the water vapor from flowing back, then cover it and steam the water for 20 minutes. This is the skin of an iced moon cake.
Step 5: In these 20 minutes, prepare the stuffing. Make two kinds today: red bean paste and milk yellow stuffing, and knead the stuffing into 25g balls. This is measured according to the mold you prepared. Mine is a 50g mold for finished moon cakes.
Step 6: OK, the mooncake skin in the pot is steamed. Take out, stir with chopsticks until smooth, and stir in one direction for about ten minutes.
Step 7: After the skin of the iced moon cake is stirred, pour it into a flat-bottomed dish with a layer of plastic wrap at the bottom, and then spread it out to cool.
Step 8: After the skin of the mooncake is cool, we divide it into 25g balls. You can adjust the amount of stuffing and skin according to your favorite taste, as long as it does not exceed the weight set by your mold.
Step 9: Pour a little cooked glutinous rice flour into the dish. Now, let's start making mooncakes with iced skin. Squeeze the skin, wrap it with stuffing and knead it into a ball.
Step 10: Knead into a round cake, roll with a layer of cooked glutinous rice flour, then knead into an oval shape, put it into a 50g mold, press-form, and demould.
Step 11: Because the finished mooncakes are soft, everyone should prepare a mooncake box before making them, and put them directly into the box after making them.
Step 12: After it is all done, put it in the refrigerator and refrigerate it for about 3 hours. It tastes good when eaten cold like this, and it won't harden in a few days. But because there is no additive, it will still harden after a long time, so it is recommended to eat as much as you want, which is not good for your health.
