1, add about 100g of potato starch to the bowl, add a teaspoon of salt and a teaspoon of alkaline noodles to it, and then add a small amount of boiling water several times and stir well.
Then add dried potato starch in several times and knead into dough.
Finally, knead into smooth dough and cover the hair for about 20 minutes.
2. Make a simple spicy soup. When the oil in the pot is hot, add pepper and fry it until fragrant, and then take it out.
Then add a spoonful of bean paste to the pan and stir-fry the red oil.
Add red pepper noodles and stir-fry until fragrant. Remember to use low heat for this piece.
Add soy sauce and vinegar, then add onion, ginger and garlic foam and stir fry.
Finally, add water, and the amount of water is added according to the amount of food eaten by the family.
Turn off the fire after boiling the soup in the pot, add salt and chicken essence and stir well.
3. The potato flour dough you just kneaded is ready. Continue to knead it smoothly.
Then put it on the chopping board and roll it with a rolling pin. This process is like rolling a handmade noodle, and it has been rolled into a thin and even dough piece.
After rolling, stack them together like this and cut them a little wider with a knife. This potato lasagna is cut.
4. Boil the water in the pot, put the potato powder in and cook it. Boil it for 3 times and you can take it out.
After the potato powder is put into the bowl, pour the hot and sour soup just made on it, and add fried peanuts, diced mustard tuber and coriander foam.
Well, our hot and sour potato noodle is finished. We do it at home without adding any additives. The potato noodle is smooth, delicious and chewy, and the method is super simple.
