Braised chicken feet

Ingredients: 3 kg of fresh chicken feet, cooking wine, soy sauce, ginger, rock sugar, salt, 3 star anise, 1 pinch of pepper, 1 cinnamon, 2 cloves, 1 tsaoko, 4 fragrant leaves, 1 pinch of fennel, 3 dried peppers and 1 pinch of dried tangerine peel.

Practice:

1, wash the chicken feet and cut off the nails. Put it in a pot and add water to stew, boil and cook for 3 minutes, then take it out.

2. Change a pot of water, add ginger slices, soy sauce, salt and seasoning packets, boil and cook for 30 minutes to make brine.

3. When making brine, add a little oil to the wok, add rock sugar, boil it to a sugar color, and then put it into the chicken feet. After stir-frying and coloring, put the chicken feet into the brine. If there is any sugar juice in the wok, you can put it together.

4. After boiling, turn to low fire and marinate for 20-30 minutes, then turn off the fire and stew for several hours.

Stewed chicken legs

Ingredients: drumsticks, ginger, aniseed, dried red pepper, soy sauce, salt, sugar, soy sauce and cooking wine.

Practice:

1, make two cuts on the washed chicken leg with a knife, put it in clean water to remove excess blood, then put it in a boiling pot, blanch it, pick it up and drain it.

2. Add a proper amount of boiling water to the pot, release a tablespoon, a teaspoon of salt, a teaspoon of sugar, a teaspoon of soy sauce, a teaspoon of cooking wine, aniseed, ginger slices, red dried peppers, etc., and make a marinade.

3. Put the chicken legs into the marinade, simmer for about 40 minutes after the fire boils, until the marinade thickens. Soak the marinated chicken legs in marinade before eating, so that they will taste more full.

Braised pig head meat

Ingredients: pork head, onion, ginger, garlic, cooking wine, fragrant leaves, pepper, star anise, cinnamon, sugar, soy sauce, salt, dried Chili.

Practice:

1, pluck the pig's head from the bought pig's head, and split it in half with a knife. The pig's ears are very dirty, so it is necessary to scrape off the hair and sundries. (Try to choose a clean one when buying)

2, put water in the soup pot, also put the pig's head meat, add the onion, ginger slices, cooking wine to boil, skim the blood foam, boil for 3-5 minutes, remove and rinse with cold water.

3. Pour fresh water into the soup pot, add the boiled pork head, and then add aniseed, fragrant leaves, pepper, cinnamon, star anise, dried pepper, ginger, onion, garlic and soy sauce.

4, another pot, pour a little oil, add white sugar to fry the sugar color, and the soup color changes and bubbles to add boiling water.

5. Pour the sugar-colored water into the pig's head soup pot, color the pig's head meat, cover the lid, boil the water and simmer for one hour.

6. Take out the pig's head meat, remove the bones, then put it in the soup pot, add salt and marinate for 20 minutes.

brine pig ear

Ingredients: 2 pig ears, old bittern 1 piece, stewed stew bag 1 bag, 30ml soy sauce, crystal sugar 15g, salt, 20ml cooking wine and onion ginger.

Practice:

1, prepare all the ingredients, scrape the pig's ears, put cold water into the pot and blanch them too cold.

2. Put the old brine into the pot and heat it with low fire to thaw, and then add the right amount of water into the pig's ear.

3, add rock sugar, boil over high fire, skim off the floating foam, simmer for 40 minutes, then add salt to taste.

4. After turning off the fire, cover and simmer for 20 minutes, remove it and shred it slightly.

Stewed pork knuckle with beer

Ingredients: pig's feet, garlic, onion, ginger, marinade, beer, soy sauce and rock sugar.

Practice:

1, the pig's feet are cleaned and cut into small pieces;

2. Boil water and add a tablespoon of white wine, put the pig's feet in boiling water, clean the hair after boiling, and control the drying for later use;

2, put oil in the pot, and the pig's feet are fried and colored;

3. Put the beer, salt, marinade bag, soy sauce, rock sugar, onion and ginger (beaten) into the pressure cooker;
